Crispy Corn Fritters in Beef Tallow

Serves: 10–12 fritters
Time: 20 minutes

Ingredients

1 cup sweetcorn kernels (fresh, frozen, or canned)

1 cup flour (all-purpose or stone-ground)

1 tsp baking powder

½ tsp salt

½ tsp smoked paprika (optional)

2 eggs, lightly beaten

½ cup milk (or kefir for extra tang)

2 spring onions, finely chopped

2–3 Tbsp fresh herbs (parsley or coriander work well)

Beef Tallow – for shallow frying


Method

In a large bowl, mix flour, baking powder, salt, and paprika.

Stir in the sweetcorn, spring onions, and herbs.

Whisk eggs and milk together, then fold into the dry mix until a thick batter forms.

Heat 2–3 Tbsp Beef Tallow in a pan over medium-high heat until shimmering.

Drop spoonfuls of batter into the pan, flattening slightly. Fry 2–3 mins per side until golden and crisp.

Drain on paper towel and serve hot with a dollop of sour cream, chutney, or chili sauce.
