Recipe – Mutton & Barley Stew
Serves: 4–6
Time: 2 hours
Ingredients
2 Tbsp Traditional Table mutton tallow
500g stewing mutton pieces
1 onion, chopped
2 carrots, chopped
1 celery stick, chopped
3 cloves garlic, minced
1 tsp dried thyme
1 cup pearl barley
4 cups beef or bone broth
Salt and pepper to taste
Method
In a large pot, melt the mutton tallow. Brown the mutton pieces and set aside.
In the same pot, sauté onion, garlic, carrots, and celery until softened.
Stir in the thyme, barley, broth, and return the browned meat.
Cover and simmer for 1.5–2 hours, until barley is tender and flavours are deep.
Season to taste and serve warm — ideally with a slice of crusty sourdough.
