Recipe – Butter Chicken with Ghee

Ingredients
2 Tbsp Traditional Table ghee
500g chicken breast or thighs, cut into bite-sized pieces
1 onion, finely chopped
3 cloves garlic, minced
1 Tbsp fresh ginger, grated
2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
½ tsp turmeric
½ tsp chilli powder (optional)
1 can (400g) crushed tomatoes
1 cup cream or coconut cream
Salt to taste
Fresh coriander, for garnish
Method
Heat ghee in a large pan over medium heat. Add chicken and brown on all sides. Remove and set aside.
In the same pan, add onion, garlic, and ginger. Sauté until fragrant and soft.
Stir in spices and cook for 1–2 minutes until aromatic.
Add crushed tomatoes, reduce heat, and simmer for 5 minutes.
Return chicken to the pan, pour in cream, and simmer gently until chicken is cooked through and sauce has thickened.
Season to taste and garnish with fresh coriander.
Serve with warm naan or fluffy basmati rice — a meal that’s both grounding and indulgent.
