Anti-Inflammatory Chocolate Gelato

Ingredients

2 cups full-cream milk

1 cup fresh cream

4 large egg yolks

¾ cup sugar or honey

⅓ cup Traditional Table Anti-Inflammatory Hot Chocolate Powder

1 tsp vanilla extract

Pinch of salt


Method

Heat milk, cream, and hot chocolate powder until steaming (don’t boil).
Whisk egg yolks + sugar until pale. Temper with hot milk, then return to saucepan.
Cook gently until custard thickens (coats the back of a spoon).
Chill overnight, then churn in an ice-cream maker or stir-freeze until creamy.
Scoop & enjoy – top with berries, coconut flakes, or an extra sprinkle of hot chocolate powder.
