Fluffy, Gut-Loving Goodness
These Banana Kefir Flapjacks are light, naturally sweet, and packed with probiotic goodness. Fry them in Beef Tallow (or your favourite Traditional Table fat) for that golden, nostalgic flavour.
Recipe – Banana Kefir Flapjacks
Ingredients (makes 8–10 flapjacks):
1 cup flour (all-purpose or stone-ground)
1 tsp baking powder
½ tsp baking soda
Pinch of salt
1 ripe banana, mashed
1 egg
¾ cup kefir (Traditional Table Kefir for extra probiotics )
1 Tbsp honey or maple syrup (optional)
Beef Tallow (or Lard/Ghee) – for frying
Method:
1. In a bowl, mash the banana until smooth. Whisk in egg, kefir, and honey.
2. In another bowl, mix flour, baking powder, baking soda, and salt.
3. Combine wet and dry ingredients until just mixed (don’t overmix – lumps are fine).
4. Heat a little Beef Tallow in a non-stick pan over medium heat.
5. Pour small rounds of batter into the pan and cook until bubbles form on the surface. Flip and cook until golden.
6. Serve warm with butter, fruit, or an extra drizzle of honey.
