Wholesome Kefir & Carrot Loaf

Recipe – Kefir & Carrot Bread

Serves: 8–10 slices
Time: 15 minutes prep, 60 minutes bake

Ingredients

1 cup grated carrots

1 cup Traditional Table whole milk kefir

½ cup fresh orange or pineapple juice

½ cup maple syrup

½ cup raisins

½ cup sunflower seeds

¼ cup coconut oil

2 eggs, beaten

1 tsp vanilla extract

2 cups whole wheat flour

½ cup ground flaxseed

½ cup wheat germ

1½ tsp baking soda

2 tsp ground cinnamon

¼ tsp ground nutmeg


Method

Preheat oven to 180°C and lightly butter your loaf pan.

In a large bowl, combine carrots, kefir, juice, maple syrup, raisins, sunflower seeds, coconut oil, eggs, and vanilla. Mix well.

In a separate bowl, whisk together the flour, flaxseed, wheat germ, baking soda, cinnamon, and nutmeg.

Gently fold the dry ingredients into the carrot mixture until just combined.

Pour into prepared loaf tin and bake for about 1 hour — or until a skewer inserted into the centre comes out clean.

Let cool before removing from tin.
